AIP Guacamole

Ingredients

  • 1 large Avocado chopped
  • 1 Shallot finely chopped
  • 1 Garlic clove peeled and finely chopped
  • 1 Lime Juice and zest (lemon is a good substitute)
  • 3 tablespoons Cilantro chopped
  • 1/4 teaspoon Salt

Instructions

  • Combine all the ingredients into a medium size bowl. Set aside for about 30 minutes to let the flavor combine.
  • Serve with plantain chips or as a side to AIP Nacho Fries.

Notes

  • Use a fork to mash your avocado.
  • Ripe avocados are usually somewhat firm but have some give.
  • Be careful when slicing open an avocado. Don’t hold it in your hand when slicing open. Knives have been known to slice right through the avocado and your hand.
