Spinach Salad with Barley, Grapes and Pickled Red Onions

- For the Red Wine Vinaigrette:
- 1/2 cup Red Wine Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1 tablespoon Maple Syrup
- 1/4 teaspoon Ground Black Pepper
- 1/4 teaspoon Salt
- 1/4 teaspoon Garlic Powder
- For the Salad:
- 2 cups Red Grapes halved
- 2 cups Barley cooked
- 3 cups Spinach
- Pickled Red Onions
To make the dressing, combine the vinegar, olive oil, maple syrup, pepper, salt and garlic powder in a jar and then set aside.
To make the salad, layer the spinach, barley, pickled onions and grapes on a serving plate.
Shake the dressing and then pour over the salad.
Give the salad a toss and then serve.
