  • In cocktail shaker, combine gin, syrup, and ice the shake vigorously for 20 seconds.
  • Strain into chilled Champagne flute or coupe and top with sparkling wine.
  • If using, add sliced strawberry and then serve.

Notes

  • Use a dry sparkling wine (champagne, cava, prosecco, etc.) instead of sweet. The Strawberry Rhubarb Syrup is sweet enough, you don’t need any additional sweetness from the champagne.
  • If you want to make this in advance, combines the simple syrup and gin. Store it in the fridge until you’re ready to serve then add the champagne.
  • If you want to make this in a larger batch (12 servings), combine 2 1/4 cups Gin with 1 3/4 cups Strawberry Rhubarb Syrup in a small pitcher. Store in the fridge. When ready to serve, evenly distribute into 12 serving glasses and top with champagne. This large batch recipe makes enough for 1 bottle of champagne.
  • Using a good quality gin makes all the difference. Bad gin just burns, but top shelf gin is much smoother with actual flavor. Hendricks Gin for example has floral and cucumber flavors.

  • I used a jigger to measure out the liquids for this drink. It’s great for cocktails as it measures under 2 ounces at a time. However, any small measure cup works.
