Mint Green Sun Tea

This Mint Green Sun Tea is a AIP diet green tea that’s refreshing and easy way to upgrade to regular green tea. It’s also made the old fashioned way, under the sun. This recipe is Paleo/AIP, Vegan and Whole30.

Ingredients

  • 4 sprigs Fresh Mint plus a few for garnish
  • 4 Green Tea Bags or packets from Pique Tea
  • 1/2 Lemon juiced
  • 1/2 Lemon sliced for garnish

Instructions

  • Fill 1 pitcher full of water. The pitcher should hold about 2 quarts. Drop the mint and tea bag into the pitcher of water. If the mint is not fragrant, then you may need to muddle the mint leaves.
  • Cover with a towel and secure with a rubber band, if it doesn’t have a top. Place the pitcher outside in the sun. The heat of the sun is what brews the tea.
  • Let the pitcher sit in the sun for about 8 hours. One you have finished brewing the tea, remove the tea bags and mint.
  • Add the lemon juice then stir. To serve pour over ice with a slice of lemon and sprig of mint.
