My husband is typically not a fan of salads. I think it’s a guy thing. I love them and I’ve been looking for ways to make him love them too. I tried to pull together a few things he does love like spinach, grains, and fruit into a salad. It worked! We’ve already had this salad twice this week.
I’m not always a fan of fruit in savory dishes but it’s the perfect fruit to cut the vinegar in the pickled onions and dressing. You don’t even realize they’re there until you bite into a little bit of sweetness.
Feel free to serve the salad and pour the dressing over the individual servings. I usually do this unless I’m feeding a crowd. I don’t like soggy salad leftovers and it’s the best way to avoid it.
I’m also doing a HUGE giveaway. I wanted to start the New Year by giving away some free money! After all the holiday spending, it feels like everyone starts pinching their pennies in January so I thought a giveaway would be a great way to make this month a little easier for one lucky winner.
I’ve teamed up with 34 other bloggers. That’s right, there are 35 bloggers participating in this giveaway. That’s how we are able to give away such a big prize.
Now for the giveaway. You have 2 weeks to enter and there are multiple ways of entering, some of which can be done up to once a day. If you are already following me on any of my social media channels, those are ‘free’ entries. You’ll just have to let me know about it in the widget below. Residents of the US, Canada and UK that are 18 or over are eligible to win. Good luck!!!
