Coconut Beetroot Latte is a surprisingly healthy drink in a shocking color of deep red. This super simple beet power recipe can be made in less than 10 minutes. This recipe suits the Autoimmune Protocol (AIP), Paleo, Vegan, Whole30 and allergy friendly diets.
1 can (14 ounces) Coconut Milk
1/2 cup Water
2 tablespoons Honey or Maple Syrup
2 tablespoons Collagen Peptides
2 tablespoons Red Beet Powder
1 teaspoon Ground Ceylon Cinnamon
1/2 teaspoon Ground Ginger
1/4 teaspoon Ground Turmeric
1/2 teaspoon Vanilla Powder
Pinch of Ground Cloves
Pinch of Salt
Combine all ingredients in a small saucepan.
Stir to combine.
Bring to a boil.
Pour into two mugs and serve.
