I love this AIP salad dressing on my Grilled Romaine Salad but it also tastes amazing as a veggie dip. Anything homemade is going to be healthier than what you in the store. Store-bought dressing has a tendency to use unhealthy oils, chemicals, and sugar.

Do all Caesar dressings have anchovies?
Traditionally, Caesar dressing has anchovies. BUT, trust me. Just try them. They give a richness and depth to the dressing that you can’t get from any other ingredient plus they are nutrient dense and it’s something we should all be focusing on.
How long does homemade Caesar dressing last?
This dressing will last 3-4 days in the refrigerator if stored in a tightly sealed container.

How do I keep my avocado dressing from turning brown?
The apple cider vinegar is acidic enough to keep the dressing from turning a dark brown color. Keeping it tightly sealed in the fridge will also help. If you are going to make this the day before just give it a stir before servings and no one will be able to tell.

Avocado Caesar Dressing
Equipment
- immersion blender or other blender
Ingredients
- 1 Avocado
- 2-3 Anchovies
- 1 Garlic Clove
- 3 tablespoons Apple Cider Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 2 teaspoons Water
- 2 tablespoons Non-Fortified Nutritional Yeast
- Salt to taste
Instructions
- Combine all the ingredients into a blender or container suitably for an immersion blender.
- Blend until smooth.
- Serve immediately or store in an airtight container in the refrigerator.
